Hello. Since I don't grow lavender, I'm not quite sure...but I do know there are different varieties of lavender that are harvested at different times of the year. For example, there's a lavender farm around Blanco, Texas and they have a lavender festival in June of the year. The Chappell Hill Lavender Farm folks have their festival every August. You might call them and ask. Hope this helps!
