Dolphins are too smart and social. They wouldn't do well in mass production, and would certainly know they were going to die when their friends start disappearing. Cows have been bred for 5000 years to be mostly dumb and docile, on top of producing way too much milk. It's just too much work to domesticate a new species.

And apparently, since the feeding process is done so quickly in dolphins, it's extremely nutrient and fat dense (around 45% milk fat)
