I have been growing pole beans for 30 years (10 in California & 20 in Missouri) and this is the first year that I have beautiful plants, lots of flowers and no beans. It was very hot (over 99) for over 15 days, but I've seen hot weather before and still got beans.

I like canned green beans much better than frozen ones, so I can understand your husband's viewpoint. However, as has been pointed out, you need a pressure canner to do vegetables and other low acid foods like fish or meat, dried beans, etc. It's easy and they are good when done correctly, so toss that batch, it's food poisoning waiting to happen.

The beans are not ruined as long as the seal is good when checked 24 hours after they were canned. When water does not completely cover the beans in the jar after they have been pressure-canned, as long as you followed all the pressure-canning rules and the jars did seal, the beans should be safe to eat.

I like the taste of canned, and frozen or fresh. Depends on how I am fixing them which I prefer. I do love the convenience of canned green beans. It's not a long cook time on the stove before we can eat them if I am doing a kettle of them with ham. Just the usual 'safety' time I do with all my low-acid canned veggies before we eat them.

Nowhere does it state the weight or amount of the beans that the water, spices and seven pieces of meat are flavoring. 7 pieces of meat wouldnâÂÂt do much to flavor the 4 pounds of beans I processed.

Older beans are great with some onion and a bit of bacon or ham for flavoring. I put them in a pan with a little water and then allow the water to cook off and let the beans caramelize slightly in the oil, butter, or bacon fat. You don't need to blanch string beans before freezing; you can just pop them into a freezer bag.
